About

Get down to the “nibby” gritty in our immersive bean-to-bar dark chocolate making class. You’ll start from scratch by selecting the single-origin cacao beans you want to use, and then crack and winnow, refine, temper, pour, and then voila chocolate bars! This class is based on our unique process of making chocolate here at the factory, on a small scale that you can replicate at home with the skills you will learn in class. This class also includes a guided tasting of the chocolate we make here at Raaka.

This class is VERY hands-on and extensive. You’ll go home with a bag of your own mini dark chocolates, an understanding of cacao sourcing, flavors, and bean-to-bar chocolate making, not to mention happy, chocolate-y memories!

NOTE:

Due to the structure of the class, chocolate making happens in groups of 2. If you’re flying solo, you may be paired up with another solo class participant for the class.

Please read through the following regarding proper attire and procedure for class:


WARDROBE:


-- This class is HANDS ON and will get messy. Please dress in clothing you don’t mind getting a little…chocolatey :). Close-toed shoes are a MUST, as we work with some heavy equipment during class. Hairnets, aprons, and gloves for food safety will be provided. They must be worn during class, so please come prepared to keep your hair covered during class.


SAFETY:


--Throughout the class we will be handling various, heavy duty, chocolate making machines (fun!). Although we have confidence in the safety of our space and structure of the class, we require all participants to sign a safety liability waiver before participating in this class. Please bring photo ID to confirm identity. Safety goggles will be available during the class. Please be mindful of this as you enter our space, for the safety of yourself, our machinery, and everyone else.


PROMPTNESS:


-- Class starts promptly! Red Hook can be difficult to get to --- please allow yourself 15-minutes extra travel time.


-- If you are running late to class or need to cancel or reschedule, please send a text message to our text line at (206) 813-3319. If you are over 20 minutes late, we reserve the right to cancel your class seat, as every minute has an impact on our small class environment.


CLASS STRUCTURE


-- Folks work together in pairs. If you're flying solo, you may be paired with another student. But don’t worry, you’ll still leave with plenty of chocolate that you made yourself (and maybe you'll even make a new friend).


HOW TO FIND US


-- Location: 58 Seabring Street Red Hook, Brooklyn. Enter through our retail space (find the pink wall!).


-- By train or bus: The closest trains are the F and G train at the Carroll St. Station, about a 15-20 minute walk. We are on the same block as the B61 stop.


-- By car: Street parking is usually plentiful on weekends in the area if you are driving, but slightly more difficult to find during the weekday. We are between the Atlantic Ave and Hamilton Ave exits off the BQE (NY 278). T


-- By bike: There are a couple bikeshare docking stations within a few blocks of us. If you're riding your own bike, there is a rack in front of our factory to lock your bike.


-- By ferry -- We're about a 10 minute walk from the Atlantic Terminal/Red Hook stop on the South Brooklyn ferry line.
